Do we have any documentation about making use of RDS servers for Application Session Management?
I am trying to figure out how do we scale up RDS servers, whether we add additional RDS servers later on or is it just increasing the CPU/RAM on the RDS VM itself? Do we need a redundant RDS server for multi site (we have a multi-site Active-Active setup with a load balancer so just checking if we also require this redundancy)?

We do have a simple KB article for RDS Server basic checklist for Application Sessions.
Adding ability to support more users can be as simple as adding additional RDS session hosts to the environment, if the RDS setup has high availability configurations in place already. Microsoft has full documentation on this procedure on their website:
Determining when to add RDS Session hosts can be determined by reviewing Tuning and Sizing configuration information from Microsoft, available at: Microsoft Article: Performance Tuning Remote Desktop Session Hosts. BeyondTrust and other RDS customers report averages of 30-40 users per session host, when those session hosts are configured as 6x CPU with 24-36GB RAM.
